Some wines you rarely see by the glass. Not because they are too good to share, but because opening the bottle is a commitment. At BISOUS on Albert Cuypstraat we make that decision for you on Wednesdays: it is Bordeaux Wednesday.

What Bordeaux Wednesday is

Every Wednesday our sommelier Erwin opens a selection of Bordeaux that usually appears on the list by the bottle only. So you can taste a glass from a house you would otherwise commit an entire evening to, and put two side by side. No lecture, no set order: just ask what is open tonight.

Left bank, right bank

Bordeaux is not one flavour. On the left bank cabernet sauvignon leads: tighter, more structured, with a core of blackcurrant and cedar. On the right bank merlot takes over: rounder, riper, softer on the finish. Erwin likes to pour them side by side, because one sip tells you more than any tasting note.

What to eat with it

A glass of Bordeaux asks for something with character. The tournedos au poivre is the classic answer, though the shrimp croquettes and the King Crab tortilla work well too. If you would rather start at the sea, the Irish Mor No. 4 oysters and the Moules Bisous are waiting, with a white Bordeaux alongside. Finish with a Zeeland bolus or a dame blanche. From the trade: craft at the table

On 3 September maître-sommelier Bjorn van Aalst became the fortieth SVH Meestergastheer in the Netherlands, a title built on product knowledge, craft and hospitality (De RestaurantKrant). Bordeaux Wednesday is our version of it.

Practical

BISOUS is open Wednesday to Saturday from 5.30 pm: until 1 am on Wednesday and Thursday, until 2 am on Friday and Saturday. You will find us a few steps from the Albert Cuyp Market, in Jean-Philippe Demeyer’s red interior. Dress code: Parisian Chic. Address and opening hours.
