Few things need so little preparation and still ask so much of whoever serves them. At BISOUS, caviar arrives on ice with warm blinis and crème fraîche beside it — and otherwise we leave it alone.

BISOUS × House of Caviar

For our caviar we work with House of Caviar. The list carries Perle Imperial — in 30, 50, 125 or 250 grams — alongside Beluga by 50 grams. Which one you choose mostly depends on how many of you there are, and how long the evening is allowed to last.

You don’t need the whole tin

There is no need to start with a tin. The petits toasts come with beurre & caviar, and the menu has a pasta caviar with beurre blanc and walnut. Want another layer? The pasta caviar & cecina adds wagyu cecina on top. See the full dinner menu.

Why champagne

Caviar is briny, rich and fatty; champagne is fresh, with bubbles that wipe all of that clean. That is why the two have sat side by side for a century. Our wine list takes its time here: Ruinart, Pol Roger and Billecart-Salmon through to Egly-Ouriet, Jacques Selosse and Krug. A blanc de blancs by Guy Charlemagne is poured by the glass too, so you can start without opening a whole bottle. See the wine list.

Ask Erwin

Our sommelier Erwin is happy to think it through with you: which champagne for which size, and what follows after. And on Wednesdays there is Bordeaux Wednesday, when he picks two Bordeaux and opens them by the glass. Rather taste everything? From the trade

Wine is a craft, and this month proved it again: on 22 September Fleur van Heemskerck, co-owner of Domaine de l’Amaurigue in Provence, was named Dutch Wine Woman of the Year 2026, partly for her commitment to sustainable, biodiverse viticulture (De RestaurantKrant).

Practical

BISOUS is open Wednesday to Saturday from 5.30 pm: until 1 am on Wednesday and Thursday, until 2 am on Friday and Saturday. You will find us a few steps from the Albert Cuyp Market. Dress code: Parisian Chic. Address and opening hours.
